SANACEL® fibre concentrates - functionality on incredibly high level

SANACEL® dietary fibre concentrates, especially powdered celluloses, sugarcane fibres and complex fibres such as potato, pea and citrus fibres, are used in a variety of ways in sausages and meat products and their vegan meat alternatives due to their high functionality. Texture improvement, yield enhancement, prevention of syneresis and fat separation are important motivations for the use of SANACEL® products. When the often high-calorie and high-fat meat products are enriched with fibre their health value is considerably increased.

SANACEL® dietary fibres can also be applied in fat reduced sausages and meat products. The natural fat and meat texture is maintained and the final product has a pleasant mouth feel. Furthermore, fat reduction is possible by using SANACEL® add mixtures as fat replacers. Fat replacers are mainly used by the food industry in light products to reduce the fat and calorie content.

Due to the high thermal stability and the significant water and oil binding capacity SANACEL® dietary fibres support the emulsion stability of cooked and boiled sausages.

We have suitable SANACEL® dietary fibres or SANACEL® add fibre mixtures available for injection and polter processes. The reduction in brine loss results in a juicier product. Syneresis is successfully avoided. SANACEL® dietary fibres, especially potato fibres, are used in minced meat products because of their high fat and water binding properties. An excellent mouthfeel and high juiciness can be combined with improved consistency and dimensional stability.

A higher yield and reduced frying losses are also advantages of using SANACEL® fibres in minced meat products.

SANACEL® fibres are also used in raw sausage production to increase cost efficiency, a uniform drying process and production reliability throughout the maturing process.
