SANACEL® pea is a fibre, which is made by a particularly gentle production from the yellow inner pea. SANACEL® pea is directly produced after harvesting and has therefore limited seasonal availability. The declaration of SANACEL® pea is „pea fibre". Please consider the specific food approval regulations and laws about the declaration of foods valid in your country.

Properties of SANACEL® pea:

  • light tan powder
  • viscosity-enhancing
  • good water binding capacity
  • dietary fibre content of about 60%

Potential applications of SANACEL® pea:

  • very wide application range
  • bread and baked goods, fresh-keeping and to increase yield
  • meat industry, yield increase
  • vegetarian and vegan products
  • in fat-reduced products, reduction of dry mouth feel
  • vacuum-packed products (counteraction to syneresis)
